Postpartum Meal Recipe Series: Miso Mushroom Soup

Miso paste is a wonderful ingredient for new moms due to the abundance of minerals like copper, magnesium, zinc and vitamin K in it, which are some of the important nutrients for new mothers. Zinc helps in maintaining a healthy immune system, and promotes cell reproduction, wound healing, tissue growth, and repair, which are all important functions during postpartum recovery. 

Mushroom is another super-ingredient which is really beneficial for new mothers. It is a good source of protein, folate, and minerals like potassium, iron and zinc. Mushrooms are also anti-inflammatory and a good source of amino acids. Mushrooms should be fully cooked and should be consumed warm with broth to get the added benefits. A medley of porcini, mitake, shitake, and chanterelle mushrooms have immunity boosting, anti-fungal, and anti-bacterial properties.

By creating these one-pot recipes, we want to make moms life easy, while making sure she stays nourished through her postpartum journey.

One Pot Miso Mushroom Soup

Ingredients

  • 1 piece Kombu
  • 5- 6 pieces of maitake mushrooms
  • 5- 6 pieces of porcini mushrooms
  • 2 tsp miso paste
  • 5- 6 bite size tofu cubes
  • Chopped vegetable like carrot or kale (optional)  
  • 1 small piece of ginger
  • 1 tsp tamari /soy sauce
  • 3 cups water
  • Salt and black pepper to taste

Directions

  • In a pot place everything with 3 cups of water. Bring to boil and then leave it on simmer for 30 minutes covered.
  • Squeeze lemon on the top 
  • Garnish with cilantro (optional )
