Postpartum Meal Recipe Series: Barley Mushroom Risotto

The holiday season is almost here and we would love you (new moms) to pamper yourself with some delicious and nourishing meals. Barley Mushroom Risotto

Eating warm, nutrient dense foods is essential during postpartum period for a healthy recovery. At the same time, it is also one of the busiest phases of life, and it can be easy for new moms to let their own health take a back seat at this time. That is why we created these one-pot recipes which provide essential nutrients to moms without overloading their already busy schedules.

Ingredients

  • 1 tsp olive oil/ butter/ ghee/ coconut oil
  • ½ cup barley
  • 2 small garlic cloves, chopped
  • 1 small onion
  • 2 cups sliced mushrooms
  • 4 cups water
  • 1 tsp salt 
  • ¼ tsp ground black pepper
  • ½ tsp Umeboshi paste
  • Vegetables (Optional)

Directions

  • Heat the oil/ butter in a deep pan. 
  • Add onions, garlic and mushrooms. Saute at a high heat for 3 minutes. 
  • Add water, barley, umeboshi paste, water, salt and pepper. You may also add vegetables at this point if you want.
  • Bring to boil, cover the pan and simmer at low heat for 40 minutes or until cooked. 
  • Serve in a bowl and garnish with cheese.
